Soak wood chips in water for 30 minutes.
Add wood chips to your smoker and preheat to 225 degrees Fahrenheit.
In a large bowl, mix jackfruit strips, olive oil, red onion, bell peppers, jalapeño pepper, garlic, cumin powder, chili powder, smoked paprika, dried oregano, and salt.
Transfer the mixture to the smoker and smoke for 2 hours.
In a small saucepan, mix tomato sauce and water.
Remove the smoked jackfruit from the smoker and let cool for 10 minutes before adding it to the tomato sauce mixture.
Serve on whole-wheat buns or tortillas and enjoy!
