This smoked bison tenderloin steak recipe is simple but full of flavor. It combines a garlic and onion flavored dry rub with mustard to give a rich savory flavor to the sweet bison meat.

1tbspsaltkosher
1 tspsmoked paprika
1/2tbsp onion powder
1/2tbsp garlic powder
1/2tsp ground black pepper
8tspmustard
Instructions
Heat the smoker to 275 F.
Mix salt, pepper, smoked paprika, onion powder, garlic powder to make the dry rub.
Take each piece of meat and spread 1 tsp of mustard on each side of every piece of meat.
Sprinkle the dry rub on all sides of the meat. The dry rub will stick to the mustard coating and add tons of flavor.
Once the smoker is hot, add the meat onto the cooking grates.
Use a meat thermometer and smoke the steak for approximately 2-3 hours or until the internal temperature reaches 145-150 F.
