Cedar Plank Salmon with Lemon, Garlic and Rosemary

Equipment

  • Cedar plank for grilling

Ingredients

  • ¼ cup olive oil
  • ½ tsp. salt
  • ½ tsp. black pepper freshly ground
  • 2 tsp. lemon zest from 2 lemons
  • 1 ½ tsp. rosemary freshly chopped
  • 1 ½ tsp. thyme freshly chopped
  • 2 cloves garlic minced
  • 4 6 oz. salmon filets with skin removed
  • Lemon wedges for serving

Instructions

  • Fill large bowl or sink with water and soak cedar planks for at least 2 hours.
  • Combine olive oil, salt, pepper, lemon zest, rosemary, thyme and garlic in a bowl large enough to hold the salmon. Mix well.
  • Add salmon and coat with ingredients. Leave in refrigerator to marinate for at least 30 minutes.
  • Preheat grill to medium high heat (400 – 450 degrees).
  • Pat soaked planks dry and put salmon on top. Place on grill and close cover. Allow to grill for 10 or 15 minutes or until salmon is done to your liking.
  • Serve salmon right off the plank with lemon wedges on the side.
