Preheat smoker to 300 degrees F.
In a large bowl, cream together the butter, sugar, and brown sugar until light and fluffy.
Beat in the eggs and vanilla extract until well combined.
In a separate bowl, whisk together the flour, salt, and baking soda. Add to the wet ingredients and mix until just combined.
Stir in the chocolate chips.
Drop spoonfuls of the batter onto a lightly greased cooling grate and place them inside the smoker. You don't need to use parchment paper.
Bake for 20-25 minutes or until the cookies are golden brown and cooked through. Use a probe thermometer to check if the cookies are cooked.
